Cheesy Cauliflower Bites are a tasty, low-carb snack or side dish that’s packed with flavor.
Ingredients
- 1 medium head of cauliflower (cut into small florets)
- 1 cup shredded cheddar cheese (or any cheese of your choice)
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 cup breadcrumbs (optional for extra crunch)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika (optional for a smoky flavor)
- Salt and pepper to taste

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the cauliflower:
Steam or boil the cauliflower florets until they are soft but not mushy (about 5-7 minutes). Drain and allow them to cool slightly.
Mash the cauliflower:
Once slightly cooled, roughly mash the cauliflower using a fork or potato masher, leaving small chunks for texture.
Combine the ingredients:
In a mixing bowl, combine the mashed cauliflower, shredded cheddar cheese, Parmesan, egg, garlic powder, onion powder, paprika, salt, and pepper. If you like a crunchier bite, you can mix in the breadcrumbs.
Form the bites:
Scoop a spoonful of the mixture and form it into small, bite-sized balls or patties. Place them on the prepared baking sheet.
Bake:
Bake for 15-20 minutes, or until the bites are golden brown and crispy on the outside. If you want them crispier, you can broil for an additional 2-3 minutes.
