Homemade Spinach and Bacon Egg Quiche

Pancetta and Spinach Quiche

This easy quiche recipe with bacon and spinach is one that everyone will love.  Serve at your next brunch.

Ingredients

  • 1 package refrigerated piecrust
  • 1 1/2 cups shredded Swiss cheese
  • 1 lb cubes pancetta cooked or 6 slices of bacon cooked and chopped
  • 2 cups chopped packed fresh baby spinach
  • 6 large beaten eggs
  • 1 1/2 cups heavy cream
  • to taste salt
  • to taste black pepper

Instructions

  • Preheat the oven to 375 °F
  • Cook pancetta and drain grease.
  • Fit piecrust to a deep dish 9 inch glass pie plate.
  • Combine the eggs, cream, salt and pepper.
  • Beat egg mixture by hand or blender.
  • Layer the spinach, bacon and cheese in the bottom of the pie crust. Do 2 layers.
  • Pour the egg mixture evenly over top.
  • Bake for 45 to 55 minutes until the egg mixture is set.
  • Cut into 8 wedges.
