Rotel Cream Cheese Sausage Balls are a savory, cheesy appetizer that’s perfect for parties, game days, or snacks. They combine the flavors of sausage, cheese, and Rotel (diced tomatoes with green chilies), with a creamy richness from the cream cheese.
Ingredients
- 1 lb ground sausage (hot or mild, depending on your preference)
- 1 can (10 oz) Rotel (drain excess liquid)
- 8 oz cream cheese (softened)
- 1½ cups Bisquick (or any baking mix)
- 1½ cups shredded cheddar cheese
- Optional: chopped green onions or jalapeños for extra kick
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Cook the sausage in a skillet over medium heat until browned and fully cooked, breaking it into crumbles as it cooks. Drain the excess grease.
In a large bowl, mix the cream cheese and drained Rotel together until well combined.
Add the cooked sausage, Bisquick, and cheddar cheese to the cream cheese mixture. Mix until everything is evenly distributed.
Form the mixture into 1-inch balls and place them on the prepared baking sheet, spacing them about 1 inch apart.
Bake for 20–25 minutes, or until golden brown and cooked through.
Let cool slightly, then serve warm. You can garnish with chopped green onions if desired.

You can also make the sausage balls ahead of time and freeze them before baking. Just bake them directly from the freezer, adding a few more minutes to the cooking time.
