Cranberry & Almond Goat Cheese Balls with Thyme Honey Drizzle
Ingredients
- 8 ounces goat cheese, softened
- 4 ounces cream cheese, softened
- 1/2 cup dried cranberries, finely chopped
- 1/3 cup roasted almonds, finely chopped
- 2 tablespoons fresh chives, finely chopped
- Zest of 1 small orange
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Thyme Honey Drizzle:
- 1/4 cup honey
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
Instructions
Prepare Cheese Mixture: In a medium bowl, combine the goat cheese and cream cheese until smooth and creamy. Add the orange zest, salt, and pepper, and mix well.
Shape Cheese Balls: Use a spoon or small scoop to form the cheese mixture into 1-inch balls. Roll each ball gently between your palms to make them smooth.
Coat with Toppings: On a plate, combine the chopped cranberries, almonds, and chives. Roll each cheese ball in this mixture, pressing gently to ensure an even coating on all sides.
Chill the Cheese Balls: Place the coated cheese balls on a parchment-lined tray or plate. Refrigerate for at least 30 minutes to allow them to firm up.
Prepare Thyme Honey Drizzle: In a small saucepan over low heat, warm the honey gently. Stir in the thyme leaves and let it infuse for about 3-4 minutes. Remove from heat and allow it to cool slightly.
Serve: Arrange the chilled goat cheese balls on a serving platter. Just before serving, drizzle the thyme honey over the cheese balls. Serve with crackers or sliced baguette for dipping.
